Apple Cinnamon Slice

I am very very happy with how this recipe turned out.

It’s sweet, moist (sorry not sorry!), cinnamony and just perfect in every way.

Full of complex carbs, polyphenols, prebiotics and fibre to keep those gut bugs happy and keep you feel energised and satiated. Easy as pie to make too. Apple pie, of course!!

Ingredients:

  • 120g oats

  • 1 tsp baking powder

  • 2 scoops vanilla plant protein powder, see Notes for a sub

  • 1 tsp cinnamon

  • Pinch of salt

  • 1 cup plant milk of choice

  • 1/2 cup (120g) applesauce

  • 1 apple, grated

  • Handful (30g) sultanas

Method:

  1. Preheat oven to 180°C and line a loaf tin with baking paper.

  2. Add your oats into a blender or food processor and blend into a flour.

  3. Combine oat flour, baking powder, protein, salt and cinnamon in a bowl.

  4. Add in milk, applesauce, apple and sultanas and gently mix to combine into a batter.

  5. Spoon into baking tin, then bake for about 30-35 minutes until golden. Allow to cool before slicing.

Notes:

  • Store in a container in the fridge for up to a week, or freeze.

  • Instead of protein powder, you can use equal amounts extra oat flour or almond meal. I would also add 1 tsp vanilla extract and about 1/4 cup sugar of choice if going for this option!
