Apple Cinnamon Quinoa Porridge

A high protein, plant based and very wholesome breakfast, as well as being a great switch up from the usual oats to get more plant diversity in your diet. Something we know is key for our gut health!

Quinoa flakes are full of plant protein, fibre, iron and zinc. They cook really quickly, and make a real fluffy, creamy and slightly nutty tasting porridge.

Definitely recommend giving them a try for a filling and warming breakfast option!

This recipe makes 1 serve.

Ingredients:

  • 60g quinoa flakes, roughy 3/4 cup

  • 1 cup calcium fortified soy milk

  • 1/2 tsp cinnamon

  • 1/2 tsp vanilla extract

  • 2 tbsp vanilla or salted caramel plant protein powder, I love Macro Mike almond protein (code is AMB-NINA)

  • 1/2 cup stewed apple

  • A few tbsp Greek style soy yoghurt

  • 1 tbsp nut butter

  • Cinnamon

  • Pinch of flaky salt


Method:

  1. Combine quinoa flakes, milk, vanilla and cinnamon in a saucepan and simmer until thick and creamy.

  2. Stir in your protein powder.

  3. Spoon into a bowl and top with yoghurt, stewed apple, nut butter, more cinnamon and a pinch of salt. Enjoy!
