Pizza Baked Oats

Pizza baked oats, you say? Yes. I am absolutely making it a thing and it is absolutely delicious, promise!!

Such an easy, quick, filling and wholesome meal or snack, that literally tastes like pizza, and can be made in less than 15 minutes.

To keep it interesting and adapt to your pizza flavour preferences, you can vary up the ‘topping’ (filling here really!) ingredients as you like and get creative. Give it a try and let me know what you think!

This recipe makes 1 serve.

Ingredients:

  • 1/2 cup rolled or quick oats

  • 2 tbsp canned tomato

  • 1 tbsp tomato paste

  • 2 tsp nutritional yeast

  • 1/4 tsp garlic powder

  • 1/4 tsp dried oregano

  • 1/4 tsp paprika

  • Pinch of salt

  • A good handful of veggie fillings of choice, see Notes

  • 3/4 cup water or plant milk

  • 1/2 tsp baking powder

  • 1 tbsp cashew parmesan or vegan cheese, to top

Method:

  1. Chop all of your filling ingredients into small pieces.

  2. Mix all ingredients together, then spoon into a heat proof ramekin or bowl and top with vegan cheese.

  3. Pop into the air fryer for 10-12 minutes at 200°C (or bake in oven for 20 minutes) until golden.

  4. Top with fresh basil and enjoy!!

Notes:

  • As mentioned, you can use any veggie fillings you like: think onion, mushrooms, capsicum, tomato, pineapple, olives…for this one, I added red capsicum, grated zucchini and this delicious vegan tofu jerky from the brand KM Foods.
