Vegan French Toast

I don’t know why it took me 5 years of plant based eating to try making a vegan French toast, but let’s just blame it on the fact that I only had it a handful of times in my entire life.

This version of French toast is high in protein, iron and fibre. It’s ridiculously easy and quick to make. It’s super soft and moist inside with a golden crust. Amazing.

An ideal breakfast, brunch or snack recipe, no further rambling needed. Try it out!

This recipe serves 1.

Ingredients:

  • 1 tbsp flaxmeal

  • 1/2 cup plant milk of choice

  • 1 heaped tbsp vanilla plant protein powder (see Notes)

  • 1/2 tsp vanilla extract

  • 1/2 tsp cinnamon

  • Pinch of salt

  • 2 slices your choice of bread, I used my Best Ever Gluten Free Bread from my Ebook

  • Toppings of choice, such as nut butter and fruit

Method:

  1. Combine flaxmeal, protein, cinnamon, vanilla, salt and milk in a shallow bowl.

  2. Dip the bread in the mix and soak it all up!

  3. Heat a non-stick pan and cook your soaked bread until golden. Flip and cook the other side.

  4. Serve with toppings of your choice. I love nut butter, banana and berries!

Notes:

  • For this recipe, I used Switch Nutrition Vanilla Bean Protein Switch (my code is NINA10) as my protein powder. If your protein isn’t very sweet, you may like to add a touch of maple syrup for extra sweetness.

  • Alternatively to protein powder, you can add a second tbsp of flaxmeal and maple syrup to sweeten to your taste.
